I love trying cookies with unique flavors so when I saw
’s recipe for fennel sugar cookies, I knew I would be adding it to my list of cookies to bake this holiday season.Sometimes the simplest things truly are the best, and for me, sugar cookies are just one great example of that truth. they’re sweet and soft with a slightly crisp edge and, of course, make a great canvas for playing around with. I’ve already published one recipe for sugar cookies, a little cornflake number with lime and tajin, but today it’s all eyes on these tender, grassy, fennel-y ones with a complementary, slightly bitter dark chocolate core.

I wanted to share one of my recipes as well and these chocolate peppermint cookies are such a treat. Even if you aren’t a peppermint fan, you will have a hard time resisting these chocolatey cookies and if you are new to baking with natural sweeteners, now is the perfect time to give it a try!
These cookies are fudgy and decadent with just the right amount of peppermint flavor … I used coconut sugar to naturally sweeten these cookies and, as a refresher or for those who might be unfamiliar, coconut sugar is the dehydrated and boiled sap of the coconut palm flower. Because coconut sugar goes through minimal processing, it retains many of its inherent antioxidants, vitamins, and minerals - especially in comparison to the standard granulated white or brown sugars, which are heavily processed.
