Open Kitchen Discussion: If you lost your ability to taste all flavors except one, which would you keep?
I don’t remember where I read this question, but I jotted it down and then forgot about it until this past weekend, when I came across it while searching for something entirely different. It’s interesting to me, because it’s kind of like asking about your favorite foods, but from a completely different perspective.

Keeping in mind that the five main categories of flavor are sweet, bitter, sour, salty, and umami, if you lost your ability to taste all of these except one, what flavor would you like to keep?
I think I’d have to choose umami, but I am practically reduced to tears at the thought of never tasting sweet, bitter, sour, or salty again! 😭

This is a tough one... I have settled on sour. Since reading Samin Nosrat's Salt, Fat, Heat, Acid, I am obsessed with Acid! Even with my kids sweets, I will nick the sour ones.
I agree with you, Rebecca - umami for me! Umami also has elements of saltiness, which would be my second choice!
